this is insane! I think I have said it before and I will say it again, writing
a blog is crazy. You can have the perfect inspiration, a great subject, an amazing
picture and yet have a blog entry that can literately be a blob! I don’t spend time
checking Google Analytics to keep track of visitors. I don’t want to be obsessed with something I
started out of fun. However, sometimes I can’t help but to get excited about
an entry that I think people are going to love. It is almost like the feeling of taking a test that you know all the answers to and believed that you aced. Have you experienced that feeling of excitement just to find out you don't have an A on your paper? Chuckle again!
Frustration can be a blessing as long as one doesn’t give up, and I am far from it. These little bumps on the road can inspire a person to be better and to try new things to improve what already may be good. It's the search for excellency that got us on the moon or in my case to have smiling faces around the dinner table; that fuels my interest in cooking.

I love
cinnamon rolls. I think they are delicious, although a little time-consuming to make. I have found a cinnamon coffee cake recipe that will alleviate the craving
of a cinnamon roll, without all the work involved in making them.
Cinnamon Coffee Cake
CAKE:
3 cups flour
1/4 teaspoon salt
1 cup sugar
4 teaspoons baking powder
1 1/2 cups milk
2 eggs
1 teaspoon vanilla
1 stick butter, melted
TOPPING:
2 sticks butter, softened
1 cup brown sugar
2 tablespoons flour
3 tablespoons cinnamon
GLAZE:
2 cups powdered sugar
5 tablespoons milk
1/2 teaspoon vanilla
Directions:
Preheat oven to 350 degrees. Spray a 9x13 glass baking pan with cooking spray. Set aside.

In a large bowl, mix the flour, salt, sugar, baking powder,
milk, eggs, and vanilla. Once combined well, slowly stir in the melted butter.
Pour into the prepared 9x13 baking pan.
For topping, in a large bowl mix the 2 sticks of butter, brown sugar,
flour and cinnamon together until well combined and creamy. Drop evenly over
the batter by the tablespoonfuls and swirl through the
cake.
Bake at 350 for 30 minutes or when a toothpick inserted near the
center comes out nearly clean.
FOR GLAZE: In a medium bowl, mix the powdered sugar, milk and
vanilla together and drizzle evenly over the warm cake.

oh boy, this looks dangerously delicious and I'm going to have to try it out - although in my household no one eats a lot of cake so I'll have to have a gathering, I think.
